TORTILLA DE PATATAS

INGREDIENTS

To make the Tortilla:

​

  • 8 potatoes

  • 2 medium onions

  • 1 tablespoon of salt

  • 2 cups of olive oil

  • 10-12 eggs

Peel the potatoes, then cut in thin slices. Take the onions and cut in squares. Crack the eggs into a bowl. and then beat them with a whisk or a fork.

 

Add the olive oil to the pan and then add the onions. Cook them on medium heat until they are golden. Then add in the potatoes and move around until they are slightly cooked.

 

Afterwards, spread the eggs throughout the pan. Wait until the eggs are browned on the bottom. Take a plate of about the same size of the pan and with one hand on the frying pan handle and the other on top of the plate to hold it steady, quickly turn the frying pan over and let the omelet fall onto the plate.

 

Slide the omelette back into the pan, and let it cook for another 5 minutes at high heat, then take it out and let rest for 2 minutes.
